General Comments
EGGS ARE COOKED IN BOILING WATER (AROUND 200F) FOR ABOUT 10 MINUTES. THE EGGS ARE THEN QUICK CHILLED IN AN ICE WATER BATH AND THEN IMMEDIATELY PLACED IN THE COOLER--THE HARD BOILED EGGS ARE NOT LEFT AT ROOM TEMPERATURE. QUICK CHILL METHOD MEETS FOOD SAFETY GUIDELINES.

ALSO, THE HARD BOILED EGGS ARE COOKED FOR SAME DAY SERVICE. EGGS THAT ARE NOT SERVED BY THE END OF THE DAY ARE THROWN OUT.

NO EMPLOYEES HAVE BEEN SICK RECENTLY. THE EMPLOYEE RESPONSIBLE FOR CUTTING EGGS ALWAYS WASHES THEIR HANDS AND WEARS GLOVES. ONCE THE HARD BOILED EGGS ARE CUT, THEY ARE IMMEDIATELY COOLED--IN THE BERG COOLER OR PLACED AT THE BUFFET TABLE.

ALL HAND WASHING STATIONS ARE EQUIPPED WITH HOT AND COLD WATER, SOAP, AND DISPOSABLE PAPER TOWELS.
